Cottage Pie

Ingredients
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 cup frozen peas
- 4 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, diced carrots, minced garlic, dried thyme, and dried rosemary to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Sprinkle the flour over the beef and vegetable mixture, and stir to combine. Cook for 1-2 minutes.
- Pour in the beef broth and tomato paste, stirring to combine. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
- Stir in the frozen peas, and season with salt and pepper to taste.
- Transfer the beef and vegetable mixture to a 9x13 inch baking dish, and spread the mashed potatoes over the top, smoothing it out with a spatula.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the cottage pie is bubbling and the top is golden brown.
- Allow to cool for 5-10 minutes before serving. Enjoy!
