Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion, diced carrots, minced garlic, dried thyme, and dried rosemary to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
  • Sprinkle the flour over the beef and vegetable mixture, and stir to combine. Cook for 1-2 minutes.
  • Pour in the beef broth and tomato paste, stirring to combine. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
  • Stir in the frozen peas, and season with salt and pepper to taste.
  • Transfer the beef and vegetable mixture to a 9x13 inch baking dish, and spread the mashed potatoes over the top, smoothing it out with a spatula.
  • Sprinkle the shredded cheddar cheese over the mashed potatoes.
  • Bake in the preheated oven for 25-30 minutes, or until the cottage pie is bubbling and the top is golden brown.
  • Allow to cool for 5-10 minutes before serving. Enjoy!
