Ingredients

  • 1 batch of cornbread, crumbled (about 8 cups)
  • 1 cup of celery, diced
  • 1 cup of onion, diced
  • 1 cup of carrots, diced
  • 1/2 cup of butter
  • 2 cups of chicken or vegetable broth
  • 2 eggs, beaten
  • 2 teaspoons of dried sage
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large skillet, melt 1/2 cup of butter over medium heat.
  • Add the diced celery, onion, and carrots to the skillet and sauté until softened, about 5-7 minutes.
  • In a large mixing bowl, combine the crumbled cornbread, sautéed vegetables, dried sage, thyme, and rosemary. Season with salt and pepper to taste.
  • In a separate bowl, whisk together the eggs and chicken or vegetable broth.
  • Pour the egg and broth mixture over the cornbread mixture and stir until well combined.
  • Transfer the stuffing mixture to a greased 9x13 inch baking dish.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and crispy.
  • Allow the stuffing to cool for a few minutes before serving. Enjoy!
