Ingredients
- 1 batch of cornbread, crumbled (about 8 cups)
- 1 cup of celery, diced
- 1 cup of onion, diced
- 1 cup of carrots, diced
- 1/2 cup of butter
- 2 cups of chicken or vegetable broth
- 2 eggs, beaten
- 2 teaspoons of dried sage
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees F.
- In a large skillet, melt 1/2 cup of butter over medium heat.
- Add the diced celery, onion, and carrots to the skillet and sauté until softened, about 5-7 minutes.
- In a large mixing bowl, combine the crumbled cornbread, sautéed vegetables, dried sage, thyme, and rosemary. Season with salt and pepper to taste.
- In a separate bowl, whisk together the eggs and chicken or vegetable broth.
- Pour the egg and broth mixture over the cornbread mixture and stir until well combined.
- Transfer the stuffing mixture to a greased 9x13 inch baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and crispy.
