  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together 1/2 cup of softened butter, 1/2 cup of granulated sugar, and 1/2 cup of brown sugar until light and fluffy.
  • Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
  • In a separate bowl, whisk together 1 cup of all-purpose flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in 1 cup of shredded coconut and 1/2 cup of chopped pecans until evenly distributed in the cookie dough.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie for spreading.
