Instructions

  • In a bowl, whisk together 1/2 cup coconut milk, zest and juice of 2 limes, 2 cloves minced garlic, 2 tablespoons soy sauce, 2 tablespoons honey, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat the grill to medium-high heat and lightly oil the grate.
  • Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until no longer pink in the center and the juices run clear.
