Coconut Chocolate Pie

Ingredients
- 1 9-inch pie crust, baked and cooled
- 1 cup of sweetened shredded coconut
- 1/2 cup of sugar
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 2 1/2 cups of whole milk
- 4 large egg yolks
- 6 ounces of semisweet chocolate, chopped
- 2 tablespoons of unsalted butter
- 1 teaspoon of vanilla extract
- 1 cup of heavy cream
- 2 tablespoons of powdered sugar
Instructions
- In a medium saucepan, combine 1 cup of sweetened shredded coconut, 1/2 cup of sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt.
- Gradually whisk in 2 1/2 cups of whole milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Continue to cook for 1 minute, then remove from the heat.
- In a small bowl, whisk 4 large egg yolks. Gradually whisk in 1 cup of the hot coconut mixture, then return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until the mixture just comes to a boil.
- Remove from the heat and stir in 6 ounces of chopped semisweet chocolate, 2 tablespoons of unsalted butter, and 1 teaspoon of vanilla extract until smooth.
- Pour the filling into the baked pie crust and smooth the top. Place a piece of plastic wrap directly on the surface of the filling and refrigerate until set, at least 4 hours or overnight.
- Before serving, in a medium bowl, beat 1 cup of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
- Spread the whipped cream over the pie and sprinkle with additional toasted coconut or chocolate shavings if desired.
- Slice and serve chilled. Enjoy!
