Instructions

  • Gradually whisk in 2 1/2 cups of whole milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Continue to cook for 1 minute, then remove from the heat.
  • In a small bowl, whisk 4 large egg yolks. Gradually whisk in 1 cup of the hot coconut mixture, then return the mixture to the saucepan.
  • Cook over medium heat, stirring constantly, until the mixture just comes to a boil.
  • Remove from the heat and stir in 6 ounces of chopped semisweet chocolate, 2 tablespoons of unsalted butter, and 1 teaspoon of vanilla extract until smooth.
  • Pour the filling into the baked pie crust and smooth the top. Place a piece of plastic wrap directly on the surface of the filling and refrigerate until set, at least 4 hours or overnight.
  • Before serving, in a medium bowl, beat 1 cup of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
  • Spread the whipped cream over the pie and sprinkle with additional toasted coconut or chocolate shavings if desired.
