Ingredients
- 1 1/2 cups of sweetened shredded coconut
- 1/2 cup of condensed milk
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1 1/2 cups of powdered sugar
- 1/2 cup of chocolate chips
- 1 tablespoon of coconut oil
Instructions
- In a mixing bowl, combine 1 1/2 cups of sweetened shredded coconut, 1/2 cup of condensed milk, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt.
- Mix in 1 1/2 cups of powdered sugar until well combined.
- Press the mixture into a greased 8x8 inch pan and refrigerate for 1 hour, or until firm.
- In a microwave-safe bowl, melt 1/2 cup of chocolate chips with 1 tablespoon of coconut oil in 30-second intervals, stirring in between, until smooth.
- Pour the melted chocolate over the chilled coconut mixture and spread evenly.
- Refrigerate for an additional 30 minutes, or until the chocolate is set.
- Cut into bars and enjoy!
