  • Preheat the oven to 350 degrees F. Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  • In a food processor, pulse 1 cup of pitted dates, 1 cup of almonds, 1/2 cup of shredded coconut, 1/4 cup of almond butter, 1/4 cup of honey, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt until the mixture comes together and forms a sticky dough.
  • Press the mixture evenly into the prepared baking dish, using a spatula to smooth the top.
  • Sprinkle the remaining 1/2 cup of shredded coconut over the top of the mixture and gently press it down to adhere.
  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Allow the bars to cool completely in the pan before using the parchment paper to lift them out and transfer to a cutting board.
