Instructions

  • In a medium saucepan, whisk together 1 cup of sugar, cornstarch, and salt. Gradually stir in water. Cook over medium-high heat, stirring constantly, until mixture comes to a boil. Continue to cook and stir for 2 minutes.
  • Remove from heat. Gradually whisk about 1/2 cup of the hot mixture into the beaten egg yolks, then return the egg mixture to the saucepan. Bring to a gentle boil and cook, stirring constantly, for 2 minutes. Remove from heat and stir in lemon juice, butter, and lemon zest. Pour into the pre-baked pie crust.
  • In a large glass or metal bowl, whip egg whites with cream of tartar until foamy. Gradually add 6 tablespoons of sugar, continuing to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  • Bake in the preheated oven for 10 minutes, or until meringue is golden brown. Cool completely before slicing and serving.
