Instructions

  • In a large pot of boiling salted water, cook 12 oz of spaghetti according to package instructions until al dente. Drain well and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease. Set aside.
  • In a bowl, whisk together 4 large eggs, 1 cup of grated Parmesan cheese, and 1/4 cup of chopped fresh parsley. Season with salt and black pepper to taste.
  • Add the cooked spaghetti to the skillet with the bacon drippings, and toss to coat the pasta with the drippings.
  • Remove the skillet from the heat and quickly pour the egg and cheese mixture over the spaghetti, stirring quickly to combine. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, add a splash of pasta cooking water to loosen it up.
