Crispy Bacon Spaghetti Carbonara
Created by: Howcan Team
Ingredients
- 12 oz spaghetti
- 6 slices of bacon, chopped into small pieces
- 4 large eggs
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- In a large pot of boiling salted water, cook 12 oz of spaghetti according to package instructions until al dente. Drain well and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease. Set aside.
- In a bowl, whisk together 4 large eggs, 1 cup of grated Parmesan cheese, and 1/4 cup of chopped fresh parsley. Season with salt and black pepper to taste.
- Add the cooked spaghetti to the skillet with the bacon drippings, and toss to coat the pasta with the drippings.
- Remove the skillet from the heat and quickly pour the egg and cheese mixture over the spaghetti, stirring quickly to combine. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, add a splash of pasta cooking water to loosen it up.
- Add the crispy bacon bits to the spaghetti carbonara and toss to combine.
- Divide the spaghetti carbonara among serving plates, garnish with additional Parmesan cheese and parsley if desired, and serve immediately.
The history of Classic Spaghetti Carbonara with crispy bacon bits dates back to the mid-20th century in Rome, Italy. This iconic dish is believed to have been created as a hearty meal for Italian charcoal workers. The traditional recipe calls for simple yet flavorful ingredients such as spaghetti, eggs, Pecorino Romano cheese, and guanciale, a type of cured pork cheek. However, crispy bacon bits have become a popular alternative to guanciale, adding a delightful crunch to the dish. Chefs in Rome, particularly in the Trastevere and Testaccio districts, are known for their mastery of this classic recipe. The key to a perfect Spaghetti Carbonara lies in achieving a creamy, yet not scrambled, egg sauce, and achieving the right balance of saltiness from the cheese and bacon. While the dish is relatively simple, it requires precision and attention to detail. Today, the best versions of this dish can be found in authentic Italian trattorias and osterias, where chefs adhere to traditional methods and use high-quality, locally sourced ingredients. When making this dish at home, it's crucial to cook the bacon until it's perfectly crispy, as this adds a delightful texture to the creamy pasta. Additionally, using the right cheese, such as Pecorino Romano, is essential for achieving the authentic flavor of Spaghetti Carbonara. While guanciale is the traditional choice, crispy bacon bits offer a delicious twist to this beloved Italian dish.
