Ingredients
- 3 large eggs
- 1/4 cup of milk
- Salt and pepper to taste
- 1 tablespoon of butter
- 1/4 cup of feta cheese, crumbled
Instructions
- In a small bowl, whisk together 3 large eggs, 1/4 cup of milk, and salt and pepper to taste.
- Heat 1 tablespoon of butter in a non-stick skillet over medium heat until melted and hot.
- Pour the egg mixture into the skillet and let it cook undisturbed for about 1 minute, or until the edges start to set.
- Using a spatula, gently lift the edges of the omelette and tilt the skillet to let the uncooked egg flow to the edges.
- Once the omelette is mostly set but still slightly runny on top, sprinkle 1/4 cup of crumbled feta cheese over one half of the omelette.
- Fold the other half of the omelette over the cheese and cook for another 1-2 minutes, or until the cheese is slightly melted and the omelette is cooked to your liking.
- Slide the omelette onto a plate, garnish with some fresh herbs if desired, and serve hot.
