Instructions

  • Preheat the oven to 375°F (190°C).
  • Place the pre-made pie crust in a 9-inch pie dish and crimp the edges. Prick the bottom and sides of the crust with a fork. Bake for 12-15 minutes, or until golden brown. Allow to cool completely.
  • In a medium saucepan, whisk together 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt. Gradually whisk in 2 cups of whole milk until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, then remove from the heat.
  • In a small bowl, whisk 4 large egg yolks. Gradually whisk in 1 cup of the hot milk mixture. Return the egg mixture to the saucepan and bring to a gentle boil. Cook and stir for 2 minutes. Remove from the heat.
  • Stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until smooth. Pour the filling into the cooled pie crust. Press plastic wrap onto the surface of the filling and refrigerate for at least 4 hours, or until set.
  • Once the creme pie is set, melt 1/2 cup of semi-sweet chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the creme pie.
