Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the thinly sliced onions to the skillet and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
  • Add the thinly sliced ribeye steak to the skillet and cook, stirring occasionally, until it is browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
  • Add the caramelized onions and thinly sliced green bell pepper to the skillet with the cooked steak, and cook for an additional 2-3 minutes, until the peppers are slightly softened.
  • Preheat the broiler in your oven.
  • Open the hoagie rolls and place 2 slices of provolone cheese on each roll. Place them under the broiler for 1-2 minutes, until the cheese is melted and bubbly.
  • Divide the steak, caramelized onions, and peppers among the hoagie rolls, and serve immediately.
