Created by: Howcan Team
Ingredients
- 2 1/4 cups of all-purpose flour
- 1 1/2 cups of granulated sugar
- 3 1/2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 cup of unsalted butter, softened
- 4 large eggs
- 1 cup of whole milk
- 2 teaspoons of vanilla extract
- 2 cups of fresh strawberries, hulled and sliced
- 1/4 cup of granulated sugar
- 2 tablespoons of cornstarch
- 1/4 cup of water
- 1 teaspoon of lemon juice
Instructions
- Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, combine 2 1/4 cups of flour, 1 1/2 cups of sugar, 3 1/2 teaspoons of baking powder, and 1 teaspoon of salt.
- Add in 1 cup of softened butter, mixing until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together 4 eggs, 1 cup of milk, and 2 teaspoons of vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a saucepan, combine 2 cups of sliced strawberries, 1/4 cup of sugar, 2 tablespoons of cornstarch, and 1/4 cup of water.
- Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries break down, about 5-7 minutes.
- Stir in 1 teaspoon of lemon juice and remove from heat. Allow the strawberry filling to cool completely.
- Once the cakes and strawberry filling are completely cooled, place one cake layer on a serving plate and spread the strawberry filling evenly over the top.
- Carefully place the second cake layer on top of the filling, then frost the top and sides of the cake with your favorite frosting.
- Slice, serve, and enjoy!
