  • 2 oranges, juiced and zested
  • 2 lemons, juiced and zested
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary

  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary

Instructions

  • Preheat the oven to 375 degrees F.
  • In a small bowl, whisk together the juice and zest of 2 oranges, juice and zest of 2 lemons, minced garlic, olive oil, honey, salt, black pepper, thyme, and rosemary.
  • Place the whole chicken in a roasting pan and pat it dry with paper towels.
  • Rub the citrus mixture all over the chicken, making sure to get it under the skin as well.
  • Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
  • Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165 degrees F.
  • Baste the chicken with the pan juices every 30 minutes during cooking.
  • Once done, remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Serve the citrus roasted chicken with the pan juices and enjoy!
