Citrus Roasted Chicken

Ingredients
- 1 whole chicken (about 4 pounds)
- 2 oranges, juiced and zested
- 2 lemons, juiced and zested
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of honey
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
Instructions
- Preheat the oven to 375 degrees F.
- In a small bowl, whisk together the juice and zest of 2 oranges, juice and zest of 2 lemons, minced garlic, olive oil, honey, salt, black pepper, thyme, and rosemary.
- Place the whole chicken in a roasting pan and pat it dry with paper towels.
- Rub the citrus mixture all over the chicken, making sure to get it under the skin as well.
- Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
- Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165 degrees F.
- Baste the chicken with the pan juices every 30 minutes during cooking.
- Once done, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve the citrus roasted chicken with the pan juices and enjoy!
