  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime

  • In a small bowl, whisk together 1/4 cup orange juice, 2 tablespoons honey, 1 tablespoon soy sauce, 1 teaspoon grated ginger, and 1/2 teaspoon garlic powder. Season the salmon fillets with salt and pepper, then brush the glaze over the fillets. Set aside to marinate for 10 minutes.
  • While the salmon is marinating, prepare the mango salsa. In a medium bowl, combine the diced mangoes, finely chopped red onion, diced red bell pepper, chopped cilantro, minced jalapeno, juice of 1 lime, and 1 tablespoon of olive oil. Season with salt to taste and mix well. Set aside.
  • Preheat the grill or a grill pan over medium-high heat. Place the marinated salmon fillets on the grill and cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks.
