Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup chopped walnuts
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 1/4 cups semisweet chocolate chips
- 1/2 cup heavy cream
- 3 large eggs
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- In a food processor, pulse 1 1/4 cups of flour, 1/2 cup of chopped walnuts, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt until the walnuts are finely ground.
- Add 1/2 cup of cold, cubed unsalted butter and pulse until the mixture resembles coarse crumbs.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 15 minutes, then remove from the oven and set aside.
- In a small saucepan, heat 1/2 cup of heavy cream over medium heat until it just begins to simmer. Remove from heat and add 1 1/4 cups of semisweet chocolate chips. Let it sit for 1 minute, then whisk until smooth. Set aside to cool slightly.
- In a large bowl, whisk 3 large eggs, 1/2 cup of packed light brown sugar, and 1 teaspoon of vanilla extract until well combined.
- Gradually whisk the chocolate mixture into the egg mixture until smooth.
- Pour the filling into the partially baked walnut crust.
- Bake for 25-30 minutes, or until the filling is set around the edges but slightly jiggly in the center.
- Allow the pie to cool completely at room temperature, then refrigerate for at least 2 hours before serving. Enjoy!
