Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.
  • In a medium bowl, mix together 1 1/2 cups chocolate cookie crumbs, 1/4 cup sugar, and 1/3 cup melted butter. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  • In a large bowl, beat 24 oz of softened cream cheese and 1 cup of sugar until smooth. Add in 3 eggs, one at a time, mixing well after each addition. Stir in 1 tsp of vanilla extract and 1/2 cup of sour cream. Finally, fold in 1/2 cup of melted semi-sweet chocolate chips. Pour the filling over the cooled crust.
  • Bake in the preheated oven for 55-60 minutes, or until the center is set. Remove from the oven and run a knife around the edges to loosen the cheesecake from the pan. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, drizzle 1/2 cup of caramel sauce over the cheesecake and sprinkle 1/2 cup of chopped pecans on top. Melt 1/4 cup of semi-sweet chocolate chips and drizzle over the pecans. Slice and enjoy!
