Ingredients
- 1 1/2 cups of chocolate cookie crumbs
- 1/4 cup of white sugar
- 1/3 cup of butter, melted
- 3 (8 ounce) packages of cream cheese, softened
- 1 cup of white sugar
- 3 eggs
- 1 teaspoon of vanilla extract
- 1 cup of semisweet chocolate chips
- 2 cups of heavy cream
- 1/4 cup of confectioners' sugar
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together 1 1/2 cups of chocolate cookie crumbs, 1/4 cup of sugar, and 1/3 cup of melted butter. Press into the bottom of a 9 inch springform pan.
- In a large bowl, beat 3 (8 ounce) packages of softened cream cheese with 1 cup of sugar until smooth. Blend in 3 eggs, one at a time, then stir in 1 teaspoon of vanilla. Melt 1 cup of semisweet chocolate chips in the microwave, stirring occasionally until smooth. Fold 1 cup of the cream cheese mixture into the melted chocolate. Pour the chocolate mixture into the crust.
- Bake for 45 minutes in the preheated oven, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight.
- In a medium bowl, whip 2 cups of heavy cream with 1/4 cup of confectioners' sugar until stiff peaks form. Spread over cheesecake before serving.
