Created by: Howcan Team
Ingredients
- For the Chocolate Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 3/4 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 3/4 cup hot water
- For the Chocolate Mousse:
- 8 ounces semisweet chocolate, chopped
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon pure vanilla extract
- For the Raspberry Coulis:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together 1 1/2 cups flour, 1 1/2 cups sugar, 3/4 cup cocoa powder, 1 1/2 teaspoons baking powder, 1 1/2 teaspoons baking soda, and 1 teaspoon salt.
- Add 2 eggs, 3/4 cup buttermilk, 1/2 cup vegetable oil, and 2 teaspoons vanilla extract to the dry ingredients. Mix until well combined.
- Stir in 3/4 cup hot water until the batter is smooth. Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- To make the chocolate mousse, melt the chopped semisweet chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth, then remove from heat and let it cool slightly.
- In a separate bowl, whip 2 cups heavy cream with 1/4 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form. Gently fold the melted chocolate into the whipped cream until well combined.
- To make the raspberry coulis, combine 2 cups fresh raspberries, 1/4 cup granulated sugar, and 1 tablespoon lemon juice in a blender. Blend until smooth, then strain the mixture through a fine-mesh sieve to remove the seeds.
- To assemble the cake, place one layer of chocolate cake on a serving plate. Spread a layer of chocolate mousse on top. Place the second layer of chocolate cake on top and cover the entire cake with the remaining chocolate mousse.
- Drizzle the raspberry coulis over the top of the cake. Refrigerate for at least 2 hours before serving to allow the mousse to set. Enjoy!
