Choco Roll with Caramel Drizzle

Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
- 1/2 cup heavy cream
- 1/4 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 10x15 inch jelly roll pan with parchment paper.
- In a small bowl, sift together 1 cup of flour, 1/4 cup of cocoa powder, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
- In a large bowl, beat 4 eggs and 1 cup of granulated sugar with an electric mixer on high speed for 5 minutes, or until thick and pale in color. Stir in 1 teaspoon of vanilla extract.
- Gently fold the flour mixture into the egg mixture until just combined. Spread the batter evenly into the prepared pan.
- Bake for 12-15 minutes, or until the cake springs back when lightly touched. While the cake is baking, lay a clean kitchen towel flat on the counter and sift 1/4 cup of powdered sugar evenly over the towel.
- Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper. Starting at the short end, roll the cake and towel together. Place the rolled cake on a wire rack to cool completely.
- In a small saucepan, heat 1/2 cup of heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in 1/4 cup of caramel sauce until smooth. Let the caramel sauce cool slightly.
- Unroll the cooled cake and spread the caramel sauce evenly over the surface. Re-roll the cake without the towel. Place seam side down on a serving platter.
- Drizzle any remaining caramel sauce over the top of the cake. Slice and serve. Enjoy!
