Instructions

  • Preheat the oven to 375 degrees F. Grease and line a 10x15 inch jelly roll pan with parchment paper.
  • In a large bowl, beat 4 eggs with 1/2 cup of white sugar until thick and pale.
  • Sift in 1/4 cup of cocoa powder, 1/4 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Gently fold into the egg mixture until well combined.
  • Stir in 1 teaspoon of vanilla extract.
  • Pour the batter into the prepared jelly roll pan and spread it out evenly.
  • Bake in the preheated oven for 10-12 minutes, or until the cake springs back when lightly touched.
  • While the cake is still warm, dust a clean kitchen towel with 1/4 cup of confectioners' sugar. Carefully invert the warm cake onto the towel and peel off the parchment paper.
  • Starting at one short end, roll the cake and towel together. Place seam side down on a wire rack to cool completely.
  • Once the cake has cooled, carefully unroll it and spread 1 cup of whipped cream over the surface.
  • Roll the cake back up and dust with additional confectioners' sugar if desired.
