  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
  • Add the ground turkey to the pot, breaking it up with a spoon, and cook until browned, about 8-10 minutes.
  • Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, and chicken broth.
  • Add the chili powder, cumin, paprika, oregano, salt, and pepper, and stir to combine.
  • Bring the chili to a simmer, then reduce the heat to low and let it cook for 45 minutes to 1 hour, stirring occasionally.
  • Taste and adjust seasoning as needed.
  • Serve the turkey chili hot, topped with shredded cheese, sour cream, and chopped green onions if desired.
