Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the diced carrots, celery, red bell pepper, and zucchini to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the drained and rinsed chickpeas, diced tomatoes, and vegetable broth. Stir to combine.
- Season the stew with cumin, paprika, turmeric, salt, and pepper. Stir well.
- Bring the stew to a simmer, then reduce the heat to low and cover the pot. Let it simmer for 20 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Sprinkle the chopped fresh parsley over the stew before serving.
