Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
  • Stir in the chickpeas, cumin, paprika, salt, and pepper. Cook for another 3-4 minutes, stirring occasionally.
  • Add the chopped spinach to the skillet and cook for an additional 2 minutes until wilted.
  • Create two wells in the chickpea and veggie mixture and crack an egg into each well.
  • Cover the skillet and cook for 3-4 minutes until the eggs are cooked to your liking.
  • Sprinkle the crumbled feta cheese over the top of the scramble and garnish with fresh parsley.
  • Divide the scramble onto two plates and serve hot.
