Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 eggs
- 2 tablespoons feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
- Stir in the chickpeas, cumin, paprika, salt, and pepper. Cook for another 3-4 minutes, stirring occasionally.
- Add the chopped spinach to the skillet and cook for an additional 2 minutes until wilted.
- Create two wells in the chickpea and veggie mixture and crack an egg into each well.
- Cover the skillet and cook for 3-4 minutes until the eggs are cooked to your liking.
- Sprinkle the crumbled feta cheese over the top of the scramble and garnish with fresh parsley.
- Divide the scramble onto two plates and serve hot.
