- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 4 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, cumin, paprika, and cayenne pepper, and cook for another 2 minutes.
