Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup dried cranberries
- 1/4 cup slivered almonds
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 8 slices of bread
- Lettuce leaves and tomato slices for serving
Instructions
- In a large bowl, combine 2 cups of cooked shredded chicken, 1/2 cup mayonnaise, 1/4 cup finely chopped celery, 1/4 cup finely chopped red onion, 1/4 cup dried cranberries, 1/4 cup slivered almonds, 1 tablespoon lemon juice, and 1 teaspoon Dijon mustard.
- Mix well until all ingredients are evenly combined. Season with salt and pepper to taste.
- Toast the 8 slices of bread if desired.
- Divide the chicken salad mixture evenly among 4 slices of bread. Top with lettuce leaves and tomato slices, then cover with the remaining 4 slices of bread.
- Slice the sandwiches in half and serve immediately. Enjoy!
