Instructions

  • In a large bowl, combine 2 cups of cooked shredded chicken, 1/2 cup mayonnaise, 1/4 cup finely chopped celery, 1/4 cup finely chopped red onion, 1/4 cup dried cranberries, 1/4 cup slivered almonds, 1 tablespoon lemon juice, and 1 teaspoon Dijon mustard.
  • Mix well until all ingredients are evenly combined. Season with salt and pepper to taste.
  • Toast the 8 slices of bread if desired.
  • Divide the chicken salad mixture evenly among 4 slices of bread. Top with lettuce leaves and tomato slices, then cover with the remaining 4 slices of bread.
  • Slice the sandwiches in half and serve immediately. Enjoy!
