Chicken Madras

Ingredients
- 1.5 lbs of chicken, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 2 green chilies, finely chopped
- 1 tsp ground turmeric
- 2 tbsp Madras curry powder
- 1 can (14 oz) of chopped tomatoes
- 1 cup of chicken stock
- 1/2 cup of coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onions and cook until they are soft and translucent.
- Stir in the minced garlic, grated ginger, and chopped green chilies, and cook for another 2 minutes.
- Add the chicken pieces to the pan and cook until they are browned on all sides.
- Sprinkle the ground turmeric and Madras curry powder over the chicken, and stir to coat the chicken evenly with the spices.
- Pour in the chopped tomatoes and chicken stock, and bring the mixture to a simmer.
- Cover the pan and let the chicken cook for 15-20 minutes, or until it is tender and fully cooked.
- Stir in the coconut milk and let the curry simmer for another 5 minutes.
- Season with salt to taste, and garnish with fresh cilantro before serving.
- Serve the Chicken Madras hot with steamed rice or naan bread.
