  • 1/2 cup of coconut milk

Instructions

  • Heat the vegetable oil in a large pan over medium heat.
  • Add the chopped onions and cook until they are soft and translucent.
  • Stir in the minced garlic, grated ginger, and chopped green chilies, and cook for another 2 minutes.
  • Add the chicken pieces to the pan and cook until they are browned on all sides.
  • Sprinkle the ground turmeric and Madras curry powder over the chicken, and stir to coat the chicken evenly with the spices.
  • Pour in the chopped tomatoes and chicken stock, and bring the mixture to a simmer.
  • Cover the pan and let the chicken cook for 15-20 minutes, or until it is tender and fully cooked.
  • Stir in the coconut milk and let the curry simmer for another 5 minutes.
  • Season with salt to taste, and garnish with fresh cilantro before serving.
  • Serve the Chicken Madras hot with steamed rice or naan bread.
