Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 6 cups chicken broth
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter
- 3/4 cup milk
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat. Add the diced onion, minced garlic, and diced jalapeno. Cook until the onion is translucent, about 5 minutes.
- Add the chicken pieces to the pot and brown on all sides, about 8-10 minutes.
- Stir in the cayenne pepper, paprika, cumin, black pepper, and salt. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes.
- While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
- Drop spoonfuls of the dumpling mixture into the simmering chicken broth. Cover and cook for 15 minutes, or until the dumplings are cooked through.
