Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine the chicken, brown rice, chicken broth, onion, carrots, celery, garlic, thyme, rosemary, salt, and pepper. Mix well and pour into the prepared baking dish.
  • Cover the dish with foil and bake for 45 minutes.
  • While the casserole is baking, melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and continue cooking, stirring constantly, until the sauce thickens.
  • After 45 minutes, remove the foil from the baking dish and stir in the frozen peas. Pour the thickened sauce over the casserole and sprinkle with Parmesan cheese.
