Instructions

  • Preheat the oven to 375°F (190°C).
  • In a food processor, combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
  • Transfer the mixture to a 9-inch tart pan with a removable bottom. Press the mixture onto the bottom and up the sides of the pan to form the crust. Place in the refrigerator to chill for 15 minutes.
  • In a medium saucepan, combine the pitted cherries, 1/2 cup of sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the cherries release their juices, about 5-7 minutes. Remove from heat and stir in the vanilla extract. Let the cherry filling cool slightly.
  • Pour the cherry filling into the chilled tart crust.
  • Brush the edges of the crust with the beaten egg to create a golden brown color when baked.
  • Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  • Allow the cherry tart to cool before serving. Enjoy!
