Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 3-4 cups fresh cherries, pitted
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Transfer the mixture to a 9-inch tart pan with a removable bottom. Press the mixture onto the bottom and up the sides of the pan to form the crust. Place in the refrigerator to chill for 15 minutes.
- In a medium saucepan, combine the pitted cherries, 1/2 cup of sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the cherries release their juices, about 5-7 minutes. Remove from heat and stir in the vanilla extract. Let the cherry filling cool slightly.
- Pour the cherry filling into the chilled tart crust.
- Brush the edges of the crust with the beaten egg to create a golden brown color when baked.
- Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
