Ingredients
- 1 cup of rolled oats
- 1/2 cup of almonds, chopped
- 1/2 cup of dried cherries
- 1/4 cup of almond butter
- 1/4 cup of honey
- 1/4 teaspoon of almond extract
- 1/4 teaspoon of salt
Instructions
- Preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine 1 cup of rolled oats, 1/2 cup of chopped almonds, and 1/2 cup of dried cherries.
- In a small saucepan, heat 1/4 cup of almond butter and 1/4 cup of honey over low heat, stirring until smooth. Remove from heat and stir in 1/4 teaspoon of almond extract and 1/4 teaspoon of salt.
- Pour the almond butter mixture over the oat mixture and stir until well combined.
- Press the mixture into the prepared baking pan, using a spatula to smooth the top.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the bars to cool completely in the pan before using the parchment paper to lift them out and transfer to a cutting board.
- Cut into 12 bars and store in an airtight container for up to a week.
