  • 4 cups of diced potatoes

  • 2 cups of shredded cheddar cheese

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large skillet, cook 1 pound of sausage over medium heat until browned. Remove from the skillet and set aside.
  • In the same skillet, melt 1/4 cup of butter over medium heat. Stir in 1/4 cup of flour to make a roux. Cook for 1-2 minutes, stirring constantly.
  • Gradually whisk in 1 cup of milk until smooth. Cook and stir until the mixture thickens.
  • Stir in 1 teaspoon of garlic powder, 1 teaspoon of paprika, and salt and pepper to taste.
  • Layer half of the diced potatoes in the bottom of the prepared baking dish. Top with half of the cooked sausage, half of the chopped onion, and half of the cheddar, mozzarella, and Parmesan cheeses.
  • Pour half of the sauce over the cheese and repeat the layers with the remaining ingredients.
  • Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  • Allow the casserole to cool for 5-10 minutes before serving. Enjoy!
