Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the potatoes clean and pat them dry. Prick the potatoes all over with a fork and rub them with olive oil. Sprinkle with salt and pepper.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  • While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain. Once cooled, crumble the bacon into small pieces.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Slice each potato in half lengthwise and carefully scoop out the flesh into a large bowl, leaving a thin layer of potato inside the skin.
  • Mash the potato flesh with sour cream, half of the shredded cheddar cheese, half of the bacon bits, and half of the chives. Season with salt and pepper to taste.
  • Spoon the mashed potato mixture back into the potato skins and top with the remaining shredded cheddar cheese and bacon bits.
  • Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with the remaining chives and serve hot. Enjoy!
