Instructions

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes and pierce them several times with a fork.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  • Remove the potatoes from the oven and let them cool for a few minutes.
  • Slice each potato in half lengthwise and carefully scoop out the flesh into a large bowl, leaving a thin shell of potato inside the skin.
  • Mash the potato flesh with sour cream, 3/4 cup of cheddar cheese, half of the crumbled bacon, and salt and pepper to taste.
  • Spoon the mixture back into the potato shells and sprinkle the remaining cheddar cheese on top.
  • Place the stuffed potatoes on a baking sheet and return them to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle with the remaining bacon and chopped chives before serving.
