- 1 cup of cashew butter
- 1/2 cup of brown sugar
- 1/4 cup of granulated sugar
- 1 egg
- 1 teaspoon of vanilla extract

- 1/4 teaspoon of sea salt, plus extra for sprinkling on top
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine 1 cup of cashew butter, 1/2 cup of brown sugar, and 1/4 cup of granulated sugar. Mix until well combined.
- Add 1 egg and 1 teaspoon of vanilla extract to the cashew butter mixture, and mix until smooth.
- Stir in 1/2 teaspoon of baking soda and 1/4 teaspoon of sea salt until fully incorporated into the dough.
- Scoop the dough into 1-inch balls and place them on the prepared baking sheet, leaving some space between each cookie.
- Using a fork, gently press down on each cookie to create a crisscross pattern. Sprinkle a small pinch of sea salt on top of each cookie.
