  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • In a small bowl, mix the Caribbean jerk seasoning with a pinch of salt and pepper. Rub the mixture onto both sides of the pork chops, then cover and refrigerate for at least 1 hour to marinate.
  • In a saucepan, combine the diced mangoes, brown sugar, apple cider vinegar, soy sauce, red pepper flakes, ginger, and garlic. Bring to a simmer over medium heat, then reduce the heat to low and cook for 15-20 minutes, stirring occasionally, until the mangoes have softened and the mixture has thickened into a glaze. Remove from heat and let it cool slightly.
  • Preheat the grill to medium-high heat. Place the marinated pork chops on the grill and cook for 4-5 minutes on each side, or until they reach an internal temperature of 145°F.
  • During the last few minutes of grilling, brush the mango glaze onto the pork chops, allowing it to caramelize and create a sticky coating.
  • Remove the pork chops from the grill and let them rest for 5 minutes before serving. Serve with additional mango glaze on the side, if desired.
