Mushroom and Spinach Carbonara
Created by: Howcan Team
Ingredients
- 12 oz spaghetti
- 4 slices of bacon, chopped
- 2 cups of sliced mushrooms
- 2 cups of fresh spinach
- 3 cloves of garlic, minced
- 1 cup of grated Parmesan cheese
- 4 large eggs
- 1/2 cup of heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot of boiling salted water, cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the sliced mushrooms to the skillet and cook until they are golden brown and have released their juices, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- In a separate bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese.
- Add the cooked spaghetti to the skillet with the mushrooms and spinach, then pour the egg and cheese mixture over the pasta. Toss everything together until the spaghetti is coated in the creamy sauce and the eggs have cooked through, about 2-3 minutes. Be careful not to scramble the eggs.
- Season with salt and pepper to taste.
- Divide the carbonara onto plates, sprinkle with the crispy bacon, and garnish with fresh parsley.
- Serve immediately and enjoy!
The history of Carbonara dates back to post-World War II Italy, where it was created as a hearty and comforting dish for the people of Rome. The traditional recipe includes eggs, Pecorino Romano cheese, pancetta, and black pepper, all mixed with hot pasta to create a creamy sauce. However, some modern variations of this classic dish include the addition of mushrooms and spinach, adding a delightful earthy flavor and extra nutrients to the dish. In Italy, renowned chefs like Gualtiero Marchesi and Massimo Bottura have put their own spin on Carbonara, incorporating local ingredients and innovative techniques. The addition of mushrooms and spinach not only enhances the nutritional value of the dish but also adds a delightful texture and depth of flavor. Today, the best versions of Carbonara with mushrooms and spinach can be found in authentic Italian restaurants that prioritize using fresh, high-quality ingredients. The key to getting this dish right lies in the balance of flavors and the proper cooking of the eggs to achieve a creamy consistency without scrambling them. For those looking to try a famous alternative method for making Carbonara with mushrooms and spinach, some chefs recommend sautéing the mushrooms and spinach separately before adding them to the pasta, allowing for better control of their individual flavors and textures. This approach can result in a more nuanced and complex dish that truly showcases the earthy essence of the added ingredients.
