Caramel Coconut Macaroons

Ingredients
- 3 cups sweetened shredded coconut
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 12 soft caramel candies, unwrapped
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together 3 cups of sweetened shredded coconut, 1/2 cup of all-purpose flour, and 1/4 teaspoon of salt.
- Add 1/2 cup of sweetened condensed milk and 1 teaspoon of vanilla extract to the coconut mixture. Stir until well combined.
- Using a cookie scoop or your hands, form the mixture into 12 mounds and place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until the macaroons are golden brown around the edges.
- While the macaroons are baking, prepare the caramel topping. In a small saucepan, melt 12 unwrapped soft caramel candies with 2 tablespoons of heavy cream over low heat, stirring constantly until smooth.
- Once the macaroons are done, remove them from the oven and let them cool for a few minutes. Drizzle the caramel topping over the macaroons.
- Allow the macaroons to cool completely before serving. Enjoy!
