Caramel Apple Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 medium apples, peeled, cored, and thinly sliced
- 1/4 cup caramel sauce
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat 3 packages of softened cream cheese and 1 cup of granulated sugar until smooth. Beat in 3 eggs, one at a time, then stir in 1 teaspoon of vanilla extract. Pour the cream cheese mixture over the crust.
- In a small bowl, toss 3 thinly sliced apples with 1/4 cup of caramel sauce and 1/2 teaspoon of ground cinnamon. Arrange the apple slices on top of the cream cheese mixture. Sprinkle with 1/4 cup of chopped pecans.
- Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, before serving.
- Drizzle with additional caramel sauce before serving, if desired. Enjoy!
