Instructions

  • Preheat the oven to 350°F (175°C).

  • In a large bowl, beat 3 packages of softened cream cheese and 1 cup of granulated sugar until smooth. Beat in 3 eggs, one at a time, then stir in 1 teaspoon of vanilla extract. Pour the cream cheese mixture over the crust.
  • In a small bowl, toss 3 thinly sliced apples with 1/4 cup of caramel sauce and 1/2 teaspoon of ground cinnamon. Arrange the apple slices on top of the cream cheese mixture. Sprinkle with 1/4 cup of chopped pecans.
  • Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, before serving.
