  • In a food processor, combine 1 cup sun-dried tomatoes, 1/4 cup pine nuts, 2 cloves garlic, 1/2 cup basil leaves, 1/2 cup Parmesan cheese, and 1/4 cup olive oil. Pulse until a smooth pesto forms. Season with salt and pepper to taste.
  • Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for the filling. Be careful not to cut all the way through.
  • Stuff each chicken breast with slices of fresh mozzarella and cherry tomato halves. Secure the openings with toothpicks to hold the filling in place.
  • Spread a generous amount of the sun-dried tomato pesto over the top of each stuffed chicken breast.
