Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 4 slices fresh mozzarella cheese
- 2 large tomatoes, sliced
- 1/4 cup fresh basil leaves
- Balsamic glaze for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
- Top each chicken breast with a slice of fresh mozzarella cheese, followed by a few slices of tomato, and a couple of basil leaves.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the skillet from the oven and drizzle the Caprese chicken with balsamic glaze.
- Serve the Caprese Chicken hot, garnished with additional fresh basil leaves if desired.
