Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1 tablespoon of Cajun seasoning
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper

- 1/4 teaspoon of onion powder
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 slices of bacon, chopped
- 1 cup of quick-cooking grits
- 4 cups of chicken broth
- 1 cup of shredded cheddar cheese
- 2 tablespoons of butter
- 2 green onions, thinly sliced
Instructions
- In a medium bowl, toss the shrimp with 1 tablespoon of Cajun seasoning, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
- In a medium saucepan, bring the chicken broth to a boil. Gradually whisk in the grits and reduce the heat to low. Cook for 10-15 minutes, stirring occasionally, until the grits are thick and creamy. Stir in the cheddar cheese and butter until melted. Keep warm.
- While the grits are cooking, heat the skillet with the bacon drippings over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, until they are pink and opaque. Remove the shrimp from the skillet and set aside.
