Vegetarian Cabbage Rolls

Ingredients
- 1 head of cabbage
- 1 cup of cooked rice
- 1 cup of diced tomatoes
- 1/2 cup of diced onion
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1 teaspoon of paprika
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried thyme
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 375 degrees F.
- Bring a large pot of water to a boil. Carefully remove 12 large leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes, then remove and set aside to cool.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Stir in the cooked rice, diced tomatoes, paprika, oregano, thyme, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
- Place a spoonful of the rice mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go, and place them seam side down in a baking dish.
- Pour the vegetable broth over the cabbage rolls, cover the dish with foil, and bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cabbage is tender and slightly browned.
- Serve the vegetarian cabbage rolls hot, garnished with a sprinkle of fresh herbs if desired. Enjoy!
