Cabbage Rolls and Mashed Potatoes

Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 small onion, finely chopped
- 1 can (15 ounces) tomato sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- Bring a large pot of water to a boil. Carefully remove 12 large leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a mixing bowl, combine the ground beef, uncooked rice, chopped onion, 1/2 cup of tomato sauce, salt, pepper, and paprika. Mix well.
- Place a spoonful of the beef mixture onto each cabbage leaf, then roll up, tucking in the sides as you go. Place the cabbage rolls seam side down in the prepared baking dish.
- Pour the remaining tomato sauce over the cabbage rolls. Cover the dish with foil and bake for 1 hour, or until the cabbage is tender and the beef is cooked through.
- While the cabbage rolls are baking, place the cubed potatoes in a pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain well.
- Mash the potatoes with a potato masher or fork. Add the milk and butter, and continue mashing until smooth and creamy. Season with salt and pepper to taste.
- Serve the cabbage rolls with the mashed potatoes and enjoy!
