  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C). Grease a baking dish with non-stick cooking spray.
  • In a shallow dish, mix 1/2 cup grated parmesan cheese, 1/4 cup bread crumbs, 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1/2 teaspoon garlic powder, and salt and pepper to taste.
  • In another shallow dish, pour 1/4 cup melted butter.
  • Dip each chicken breast in the melted butter, then coat with the parmesan mixture, pressing gently to adhere. Place the coated chicken breasts in the prepared baking dish.
  • Drizzle any remaining melted butter over the coated chicken breasts.
  • Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the crust is golden and crispy.
  • While the chicken is baking, in a small saucepan, melt the remaining 2 tablespoons of butter. Stir in 2 tablespoons of chopped fresh parsley and cook for 1-2 minutes until fragrant.
  • Once the chicken is done, remove from the oven and drizzle the herb butter over the top before serving.
