  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp Burmese curry powder
  • 1 tsp turmeric
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 8 oz rice noodles
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro and sliced red chilies for garnish

  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 8 oz rice noodles
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro and sliced red chilies for garnish

Instructions

  • In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.
  • Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes.
  • Stir in the Burmese curry powder and turmeric, and cook for 1-2 minutes to toast the spices.
  • Pour in the chicken broth, coconut milk, fish sauce, soy sauce, and brown sugar. Bring the mixture to a simmer and let it cook for 15-20 minutes until the chicken is cooked through and the flavors are well combined.
  • While the curry is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
  • Once the chicken is cooked, stir in the lime juice and season with salt and pepper to taste.
  • To serve, divide the cooked rice noodles among serving bowls and ladle the chicken curry over the top. Garnish with fresh cilantro and sliced red chilies.
