Burmese Chicken Noodle Curry

Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp Burmese curry powder
- 1 tsp turmeric
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 8 oz rice noodles
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro and sliced red chilies for garnish
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes.
- Stir in the Burmese curry powder and turmeric, and cook for 1-2 minutes to toast the spices.
- Pour in the chicken broth, coconut milk, fish sauce, soy sauce, and brown sugar. Bring the mixture to a simmer and let it cook for 15-20 minutes until the chicken is cooked through and the flavors are well combined.
- While the curry is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
- Once the chicken is cooked, stir in the lime juice and season with salt and pepper to taste.
- To serve, divide the cooked rice noodles among serving bowls and ladle the chicken curry over the top. Garnish with fresh cilantro and sliced red chilies.
