  • Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
  • Sprinkle 2 tablespoons of all-purpose flour over the onion and garlic, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  • Slowly pour in 4 cups of chicken or vegetable broth, stirring constantly to prevent lumps from forming.
  • Add 4 cups of broccoli florets to the pot and bring the mixture to a simmer. Cook for 15-20 minutes, or until the broccoli is tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  • Stir in 1 cup of heavy cream and 2 cups of shredded cheddar cheese until the cheese is melted and the soup is creamy.
  • Season the soup with 1 teaspoon of red pepper flakes, and salt and pepper to taste. Adjust the seasoning to your preference.
