Ingredients
- 4 cups of broccoli florets
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 2 cups of shredded cheddar cheese
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 1 teaspoon of red pepper flakes
- Salt and pepper to taste
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
- Sprinkle 2 tablespoons of all-purpose flour over the onion and garlic, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in 4 cups of chicken or vegetable broth, stirring constantly to prevent lumps from forming.
- Add 4 cups of broccoli florets to the pot and bring the mixture to a simmer. Cook for 15-20 minutes, or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Stir in 1 cup of heavy cream and 2 cups of shredded cheddar cheese until the cheese is melted and the soup is creamy.
- Season the soup with 1 teaspoon of red pepper flakes, and salt and pepper to taste. Adjust the seasoning to your preference.
- Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
