  • 2 cups vegetable broth
  • 1 head of broccoli, chopped into florets
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 jalapenos, seeded and diced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Fluff with a fork and set aside.
  • While the quinoa is cooking, steam the broccoli florets until tender, about 5 minutes. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and jalapenos, and cook for an additional 2 minutes.
  • Stir in the cooked quinoa, steamed broccoli, cumin, paprika, cayenne pepper, and 1 cup of shredded cheddar cheese. Cook for 2-3 minutes until the cheese is melted and everything is well combined. Remove from heat and stir in the Greek yogurt. Season with salt and pepper to taste.
  • Transfer the quinoa and broccoli mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and breadcrumbs on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.
