Ingredients
- 3 lbs beef flanken ribs
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
- 5 large potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 cup heavy cream
- 4 cloves garlic, minced

Instructions
- Preheat the oven to 325°F.
- Season the beef flanken ribs with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat. Brown the ribs on all sides, then remove and set aside.
- Add the chopped onion and minced garlic to the Dutch oven and cook until softened, about 5 minutes.

- Once the beef is done, remove from the oven and let it rest for 10 minutes before serving.
