Blueberry Lemon Tart with Lavender-Infused Honey Glaze
Created by: Howcan Team
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2-3 tablespoons ice water
- 2 cups fresh blueberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 cup water
- 1/4 cup honey
- 1 teaspoon dried culinary lavender
Instructions
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Add 2 tablespoons of ice water and pulse until the dough comes together. If needed, add an additional tablespoon of ice water. Do not overmix.
- Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim any excess. Prick the bottom of the dough with a fork.
- Line the tart shell with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes. Remove the parchment paper and weights, then bake for an additional 5 minutes, or until the crust is golden brown. Allow to cool.
- In a saucepan, combine the blueberries, 1/2 cup of sugar, cornstarch, lemon zest, lemon juice, and 1/4 cup of water. Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries burst, about 5-7 minutes. Remove from heat and let it cool slightly.
- Pour the blueberry filling into the cooled tart shell, spreading it out evenly. Refrigerate for 1 hour to set.
- In a small saucepan, heat the honey and dried lavender over low heat until the honey is warm and fragrant. Remove from heat and let the lavender infuse the honey for 10 minutes. Strain the honey to remove the lavender buds.
- Drizzle the lavender-infused honey over the set blueberry tart. Slice and serve. Enjoy!
